The vendor states that files are uploaded to their servers. We have not independently tested this.
Documents are uploaded to Mindee's cloud API. Mindee states the original uploaded file is never written to disk and that only extracted results are retained - twelve hours by default, configurable from one to twenty-four, or deleted on first fetch.
The processing region can be set to Europe, the United States or a global default on paid plans.
What it does
Mindee is a hosted document-AI REST API, currently documented as V2 on app.mindee.com, with older platform.mindee.com/V1 material still present in the documentation but not the current product line. It turns uploaded documents into structured JSON using ready-made extraction templates or custom extraction models, with field-level confidence scores, polygon coordinates and optional full-page raw text.
Utility models cover splitting multi-page files, cropping multiple documents from one page, classification and a dedicated Raw Text OCR model. The API is asynchronous and RESTful, requires an API key and account, and supports polling or webhooks with official SDKs.
It is not a local or self-hosted service: documents are uploaded to Mindee and processed in the vendor cloud. Current documentation lists Starter at EUR 44 per month and Pro at EUR 116 per month with annual billing, plus custom Enterprise pricing; the trial is 200 credits or 14 days with a 10-page-per-document limit, not a permanent free plan.
Processing zones can be set to no preference, Europe or the United States, subject to plan availability, and storage retention is 1-24 hours with a 12-hour default. The open-source docTR library is separate and does not make this API self-hostable.

Worth knowing
Mindee is a hosted REST API: documents are uploaded to and processed by Mindee, an account and API key are required, and there is no self-hosted Mindee API edition. The separate open-source docTR library originated at Mindee but does not change that.
Current documentation shows V2 as the latest line, with older V1 material on platform.mindee.com; do not treat V1 models or third-party write-ups as the current API. Current docs list Starter at EUR 44 per month and Pro at EUR 116 per month with annual billing, plus custom Enterprise pricing; the plans page no longer shows the older Pro EUR 179 or Business EUR 584 figures and does not list a Business plan.
The trial is 200 credits or 14 days, whichever comes first, capped at 10 pages per document, and is not a permanent free plan. Pricing is vendor-published in EUR; no GBP price has been verified, so no currency conversion or GBP price is asserted.
Processing-zone controls are not available on all plans; No Preference is the default and may route to Europe or the United States, while Europe/US options restrict processing only, not support or extraction-analysis access. Storage retention is 1-24 hours with a 12-hour default; files sent by API are not saved to disk, and extracted data can be deleted on fetch or after the storage period.
These are vendor statements and have not been independently probed. The API returns extracted values and confidence/polygon data and has no masking, redaction, editing, conversion, signing or repair feature.
Structured extraction is not generic PDF text extraction and does not guarantee semantic correctness; OCR is the separate Raw Text model and does not guarantee layout understanding or accuracy. Extraction and OCR results require review and must not be treated as legally or semantically validated.

The current page still carries this vendor sentence, but it is a self-assessment: the SOC 2 Type II report is not published and no independent evidence was supplied. The same page says the processing-zone control is not available on all plans, that the default No Preference zone may process data in Europe and the United States, that storage retention defaults to 12 hours with a 1-24 hour range, and that files sent by API are not stored to disk.
It also notes that the processing zone covers processing only, not support or extraction/analysis access. The old verified entry and its changed recheck are superseded; this is retained as a qualified vendor-reported claim, not a verified guarantee.
